The following data depicts the catalysis of lactose into glucose and galactose by the lactase enzyme. The concentration of glucose produced is given at various time periods throughout the course of the reaction while the concentration of the substrate, [S], lactose was varied in each trial. The concentration of lactase is constant in each of the three trials.
