As the reaction proceeds, more product is formed. This graph corresponds to Trial 1 where the [lactose] is 0.05mM. The initial velocity, v0, can be determined from the graph at a point when [S] is close to the initial concentration. The one minute mark was chosen to measure the initial velocity.
